Gazpacho

This spicy “South of the Border” soup will cool you off on these dog days of summer. There are a lot of ingredients but so worth the effort. The best part is that there is absolutely no cooking involved. This is one of those recipes that can be easily cut in half if you don’t want left overs or it can be doubled if you’re serving a crowd.
