3 Pounds Mixed Red Potatoes and Sweet Potatoes, Sweets Peeled and Both Cut into 1” Pieces (Large Chunks)
¼ Cup Duck Fat
1 Teaspoon Coarse Sea Salt
½ Teaspoon Freshly Ground Black Pepper
Preheat oven to 425°F.
In a sauté pan large enough to hold potatoes in a single layer, heat duck fat over high heat. Add potatoes and toss to coat with duck fat. Sprinkle with salt and pepper and toss again to coat potatoes.
Place pan in preheated oven and roast for 40 minutes, tossing potatoes in pan half way through cooking time. Potatoes are done when nicely browned on all sides and a fork goes through potato without resistance.
